Fine Plum Cake

I adore pastries that are crispy and juicy, creamy and full of flavor, so they remain memorable for a long time. And they also pair well with sweet wine, liqueur, coffee… In short, this plum cake is exactly that, and it also looks very beautiful.

Ingredients
Dough

Steps

First, prepare the dough. Sift the flour, add cold butter cut into cubes and sugar (regular and vanilla). Quickly mix with your hands to create crumbs. Add the beaten egg and salt, and quickly knead into a smooth and pliable dough. If it sticks to your hands, add a little more flour.

Evenly spread the dough with your fingers over the bottom of a baking dish (25 x 25 cm) lined with parchment paper.

Prepare the filling. Place all the ingredients in a bowl and mix with a whisk until you get a smooth and uniform cream without lumps. Pour it into the baking dish and spread it evenly over the unbaked dough with a spatula.

Wash the fresh plums, remove the pits, and slice them thinly. Carefully arrange the slices on the cream.

Bake the cake for 40-45 minutes in an oven preheated to 175-180 degrees Celsius (depending on the oven).

Prepare the meringue. Add egg whites and sugar to a bowl. Pour a little water into a pot and bring it to a boil. Place the bowl with the egg whites over the pot. Heat the egg whites over the steam until you can't hold your finger in the mixture for more than a few seconds. Remove the bowl and beat the egg whites with a mixer until you get a fluffy mixture. Transfer it to a piping bag fitted with any decorating tip.

Once the cake has cooled slightly, decorate it with the meringue. Instead of meringue, you can also use whipped cream. The cake can also be served with a scoop of ice cream or simply dusted with powdered sugar.

Advice
If youre in a hurry, you can dice the plums and simply sprinkle them over the cream. Instead of fresh plums, you can use frozen ones or choose another fruit of your choice. The cake can be cut into smaller pieces, served in paper molds, and thus you get a delicate pastry suitable for various celebrations.
