Finnish Salmon Soup

Ingredients

2 spoons Oil, olive

1 piece Onion, raw

5 pieces Potatoes, white

2 piece Spices, bay (leaves)

500 g Fish, salmon

1 l Soup base, chicken, cube

200 ml Sweet cream

pieces Salt, table

1 handful Dill, fresh
Steps

Peel, clean, and wash the potatoes. Cut them into approximately 1.5 cm cubes. Peel the onion and finely chop it.

Heat the oil in a pot and sauté the chopped onion, stirring occasionally, until it softens slightly. Add the cubed potatoes and a bay leaf, then pour in just enough water to cover the potatoes. Cover the pot with a lid and cook the potatoes over moderate heat until they soften (but do not overcook).

Rinse the salmon fillet and pat it dry with paper towels. Cut it into smaller pieces and add them to the pot with the potatoes. Cook for about 5 minutes, then add the broth and cream. Season the soup with pepper and salt to taste and simmer over moderate heat for another 5 to 10 minutes.

Once the soup is ready, remove the pot from the heat and stir in the dill. Serve the soup in bowls or deep plates and accompany it with rye bread.

Advice
