Fish Balls
An appetizer for four hungry mouths: fried fish balls will delight even the kids!

Ingredients

50 g Bread, wheat

350 g Fish, white fish

1 piece Lemon, fresh, without shell

1 piece Egg, fresh

2 pinch Salt, table

1 pinch Spices, pepper, black

Steps

Cut the white bread into smaller pieces and soften it in cold water. Remove any bones from the fish fillets with tweezers and cut them into smaller pieces. Thoroughly wash the lemon, grate the zest, then cut it in half and squeeze the juice.

Squeeze the soaked bread well and place it in an electric mixer along with the fish and two tablespoons of lemon juice. Blend coarsely. Add the egg and one tablespoon of grated lemon zest, then season with pepper and salt to taste. Blend again until you get a smooth mixture.

Heat the oil in a deep pan until very hot. To check if it's hot enough, dip a wooden spoon handle into the oil for a moment. The bubbles that appear will confirm that the oil is ready.

Wet your hands with cold water and shape the mixture into small balls. Repeat the process until all the mixture is used. Fry the balls in the oil for about 3 to 4 minutes. Use a slotted spoon to remove them from the oil and place them on kitchen paper.

Serve the fish balls on plates and offer them to your guests with a suitable side dish.

Advice
Be sure to remove the crust from the bread. Day-old bread works best. We recommend using hake or salmon fillets. For enhanced flavor, you can add freshly chopped herbs (parsley, cilantro, rosemary,…). Its best to shape a small test ball from the fish mixture and dip it into hot oil to see what happens: if the ball falls apart, it means the mixture is too soft and needs to be thickened with breadcrumbs. There should be enough oil for frying so that the balls can float in it.
