Fish Fillets with Cherry Tomatoes
Even during the week, we can prepare a quick and healthy lunch or dinner. Choose fresh fish fillets and bake them together with cherry tomatoes in the oven. Since the oven will do all the work for us, we can also prepare a tasty side dish. We suggest rice, couscous, or roasted or boiled potatoes.

Ingredients

350 g Tomato, red

4 pods Garlic, fresh

50 ml Oil, olive

600 g Fish, white fish

0.5 bouquet Parsley, fresh

1 teaspoon Juice, lemon

0.75 teaspoons Salt, table

2 pinch Spices, pepper, black

Preheat the oven to 180 degrees Celsius. Wash the cherry tomatoes and cut them in half (larger tomatoes can be cut into quarters). Also wash the fish fillets and dry them well with paper towels. Lightly season them with pepper and salt.

Place the cherry tomatoes in a deep baking dish and lightly season them with salt. Add a few crushed unpeeled garlic cloves and drizzle everything with half of the oil. Place the dish in the preheated oven for 15 minutes.

While the vegetables are baking, prepare the herb sauce. Rinse the herbs under running water, shake them well, and finely chop them. Mix the chopped herbs in a bowl with the remaining olive oil and lemon juice.

After 15 minutes, remove the dish from the oven and place the fish fillets in it. Pour the prepared herb marinade over them (drizzle some marinade over the tomatoes as well), then return the dish to the oven for another 15 to 20 minutes.

Serve the baked fillets on plates. Add the roasted tomatoes on the side and serve the dish with your chosen side.

Advice
Instead of white fish fillets, you can use salmon fillets.
