Fish Fillets with Herb Crust

1.5 spoons Oil, olive

4 pieces Fish, white fish

50 g Breadcrumbs, dried

25 g Cheese, Parmesan, hard

4 twig Parsley, fresh

3 twigs Basil, fresh

1 piece Lemon, fresh, without shell

Clean the fish fillets if necessary (remove any bones) and rinse them. Dry them thoroughly with paper towels and lightly season with pepper and salt. Tear the leaves of parsley and basil and chop them very finely. Wash the lemon and dry it thoroughly. Grate the zest finely, cut the lemon in half, and squeeze the juice from one half.

Preheat the oven to the highest temperature and turn on the broiler. In a bowl, mix the breadcrumbs, chopped herbs, Parmesan, lemon zest, salt, and pepper.

Heat oil in a large ovenproof skillet. Place the seasoned fillets in the hot skillet and cook for about 2 to 3 minutes until the bottom side is seared. Carefully flip the fillets and top them with the breadcrumb, Parmesan, and herb mixture. Place the skillet in the oven for 2 to 3 minutes to crisp up the breadcrumbs.

Remove the skillet from the oven. Add the lemon juice and butter, and wait until the butter is completely melted. Serve the fillets on plates with the sauce that has collected in the skillet. Offer the prepared dish with a side of your choice.

Advice
Be careful when adding salt, as Parmesan is also salty. You can use dry or fresh breadcrumbs. If using fresh breadcrumbs, finely chop them together with the herbs in a food processor.
