Flambéed Apricots with Mascarpone Cheese and Ice Cream
The irresistible aroma of apricots is hard to resist. When combined with crispy biscuits, creamy mascarpone cheese, and the rich flavor of good ice cream, this summer treat becomes almost unbeatable. The recipe is simple and suitable even for beginner cooks, especially since this time we don’t even need a scale for preparation.

1 spoon Butter, unsalted

3 spoons Sugar, brown

2 spoons Seeds, pumpkin

Steps

Melt the butter in a pan. Meanwhile, cut the apricots in half and remove the pits. Place them in the pan with the butter, cut side up.

Carefully add a little brown sugar into each cavity (where the pit was). Bake the apricots for about 3 minutes, then flip them so the cavities are facing down. Sprinkle the apricots with vanilla sugar and bake on low heat for a few minutes until the sugar caramelizes nicely.

Flip the apricots again and pour the cognac over them. Carefully ignite with a torch or lighter and let the alcohol evaporate. Remove the pan from the heat.

While the apricots are still warm, serve them on plates. First, add some crushed biscuits to each plate and place the apricots on top. Fill the cavities with mascarpone cheese. Sprinkle everything with crushed pumpkin seeds and drizzle with a spoonful of honey. Add a few thyme leaves and a large scoop of ice cream. Serve the dessert immediately.

Advice
If you don’t have apricots, you can use peaches, and instead of thyme, you can use mint. Use the ice cream that you like the most. Flambéing is not strictly necessary, so you can skip this step. Instead of crushed pumpkin seeds, you can use hazelnuts, pistachios, almonds, pine nuts, etc.
