Flambeed Pineapple with Honey

Ingredients

1 piece Pineapple, fresh

2 spoons Honey

3 spoons Alcohol, Rum

40 g Oil, plant, coconut
Steps

First, cut off the core and leaves of the pineapple. Place it on the cut end of the core and hold it firmly. With the other hand, using a long knife, cut the scaly skin from top to bottom in strips. Peel the fruit as thickly as possible to remove all the "eyes". Then cut the pineapple into 2 cm thick rings. Use a ring cutter to remove the hard center and cut the rings into triangles.

In a pan, melt the coconut butter and place the pineapple on it, lightly browning it on both sides. While cooking, baste it with the juice that has been released. Pour the maraschino into the pan at the edge, not too much at once, as it can create too high a flame.

With a lit match, ignite the alcohol at the edge to set it on fire. Baste the fruit with the burning alcohol for as long as the flame almost goes out. Remove the flambeed pineapple from the pan and transfer it to a plate. Add honey to the pan and quickly heat it, mixing it with the sauce.

Pour the sauce from the pan over the flambeed pineapple and serve.
