Flatbread with Cracklings
Light and soft leavened dough, on which delicious cracklings glisten like tiny crystals. Flatbread with cracklings is an excellent idea for a snack, served with a glass of good wine or beer.

500 g Wheat flour, white, multi-purpose

10 g Salt, table

42 g Yeast, dry

100 g Meat, pork, smoked bacon

Steps

Crumble the yeast into a cup and mix it with lukewarm water, sugar, and a spoonful of flour. Let it stand in a warm place for 10 minutes to allow the yeast to rise slightly.

Sift the flour into a larger bowl and make a well in the center. Sprinkle salt around the flour near the well, and pour the risen yeast into the well. Mix the ingredients with clean hands until they come together to form a rough dough. Then transfer the dough from the bowl to a lightly floured work surface and knead for 10 minutes or until it becomes elastic and no longer sticks to your hands or the work surface. If the dough is too soft, add a little more flour; if it's too dry, add a bit more lukewarm water. Shape the kneaded dough into a ball, place it in a greased bowl, cover with a clean cloth, and let it rise in a warm place until the volume of the dough doubles (approximately 1 hour).

Transfer the risen dough to a lightly floured work surface and roll it out into a larger circle. The thickness of the dough should be 1 cm. Transfer the rolled-out dough to a baking tray lined with parchment paper. First, brush the top with beaten egg, then sprinkle with cracklings. Season with a bit of freshly ground pepper. Bake the flatbread in a preheated oven at 180 degrees Celsius for 20 to 25 minutes.

Remove the baked flatbread from the oven, transfer it to a wooden board, cut it into 12 pieces, and serve with a glass of wine or beer.

Advice
Instead of water, you can use milk, or a mixture of water and milk. Before baking, instead of an egg, you can brush the dough with sour cream.
