Florentine Cookies
How could they not be heavenly good when they contain only the best ingredients?! The base consists of honey, nuts, and candied fruit, while white chocolate, in which the baked cookies are dipped, adds a special touch.

Steps

Add sugar, honey, and a pinch of salt to a saucepan. Pour in the cream and heat while occasionally stirring until the mixture comes to a boil.

Coarsely chop the pistachios. Cut the candied cherries into pieces and place them in a bowl. Add candied orange peel, almond slices, and chopped pistachios.

Once the mixture of cream, sugar, and honey boils, remove the saucepan from the heat and pour the contents into the bowl with the candied fruit and nuts. Mix the ingredients well with a spatula. Wait for the mixture to cool to room temperature, then chill it thoroughly in the refrigerator.

Preheat the oven to 180 degrees Celsius. Grease the muffin tin cavities with butter. Spoon the cooled mixture into the cavities (fill them to 1/4). Bake the Florentines in the preheated oven for 10 to 15 minutes or until they turn golden brown at the edges.

Let the baked Florentines cool in the tin for a few minutes, then transfer them to a paper-lined surface to absorb excess fat.

Chop the white chocolate into pieces and melt it over a double boiler. Dip the bottom of the cooled cookies into the melted chocolate. Place the cookies on parchment paper. Wait for the chocolate to set, then serve.
