Ingredients

200 g Butter, unsalted

2 spoons Honey

175 g Sugar, white

160 ml Sweet cream

50 g Candied fruit

125 g Nuts, almonds, blanched

100 g Flour, Wheat, bread flour

20 pieces Candied fruit

200 g chocolate, dark
Steps

Place butter, sugar, honey, and cream in a saucepan and set it on the stove. Heat over medium heat, stirring constantly until the sugar is completely dissolved. Once the mixture comes to a boil, add the candied orange and lemon zest along with the almond slices. Cook for another 2 minutes, then remove the saucepan from the heat and mix in the flour. Let the mixture cool slightly.

Preheat the oven to 200°C (392°F). Line two baking trays with parchment paper. Spoon approximately 40 small mounds of the prepared mixture onto the trays. Press half a candied cherry into the center of each mound. Make sure the mounds are not too close together, as the mixture will spread during baking!

Place one baking tray in the preheated oven and bake the Florentines on the middle rack for 8 to 10 minutes. Once baked, remove the tray from the oven and let the cookies sit for 2 minutes to allow the mixture to set slightly. Meanwhile, place the second tray in the oven. After 2 minutes, use a round cutter to cut out circles from the mixture (ensuring the cherry remains in the center). Repeat the process with the Florentines on the second tray.

Melt the chocolate in a double boiler. Generously coat the bottom side of each Florentine with the melted chocolate. Place the cookies on a wire rack with the chocolate-coated side facing up. Allow the chocolate to set, then arrange the Florentines on a serving plate and serve.

Advice
Florentines can also be baked by arranging egg frying rings on the baking tray. Place a spoonful of the mixture in each ring and press half a candied cherry into the center. This recipe yields approximately 40 Florentines.
