Flourless Chocolate Cookies

60 g Cocoa, powdered, unsweetened

Preheat the oven to 180 degrees Celsius. Line two low baking trays with parchment paper. Chop the chocolate into small pieces.

Sift the cocoa powder and powdered sugar into a bowl. Add salt and mix everything well. Then add the egg whites and vanilla extract, and mix everything thoroughly with an electric mixer until you get a uniform mixture. Use a spatula or spoon to fold in the chocolate pieces.

Using a spoon, place dollops of the chocolate mixture onto the prepared baking trays. Make sure there is about 5 cm of space between each dollop, as the cookies will spread during baking.

Bake the cookies in the preheated oven for about 10 to 12 minutes, or until they are browned on the top and edges but still soft in the center. If you prefer crispier cookies, bake them for 12 to 14 minutes.

Remove the baking trays from the oven and let the cookies cool on the trays for 5 to 10 minutes. Then transfer them to a wire rack and let them cool completely.
