Flourless Chocolate Roulade

Ingredients

100 g chocolate, dark

5 pieces Egg, fresh

60 g Sugar, white

150 ml Sweet cream

100 g Cheese, creamy

1 spoon Powdered sugar

2 spoons Juice, orange

Steps

Preheat the oven to 200 degrees Celsius. Roughly chop the chocolate and melt it in a water bath (see tips). Stir the melted chocolate and let it cool.

Separate the egg whites and yolks into two bowls. Whisk the yolks with sugar until frothy, and beat the egg whites into stiff peaks. Slowly mix the cooled melted chocolate into the yolk mixture. Then, gently fold in the beaten egg whites with a hand whisk.

Line a low baking tray (for biscuits and roulades) with baking paper. Pour the batter into the prepared tray and spread it evenly with a spatula, smoothing the top. Bake the sponge in the preheated oven for about 10 minutes.

Sprinkle powdered sugar on a clean kitchen towel. Wet another kitchen towel and wring it out well. Take the baked sponge out of the oven and place it on the towel sprinkled with powdered sugar (the side with the baking paper should be facing up). Cover it with the wet towel. Wait 1 to 2 minutes, then remove the baking paper and cover the sponge again with the wet towel. Let the sponge cool.

Meanwhile, prepare the cream. Whip the cream until stiff. Mix mascarpone with powdered sugar and orange juice. Add the whipped cream and gently fold everything together.

Once the sponge has cooled, remove the baking paper and spread the prepared filling over it. Roll it into a roulade, place it on a serving platter, and serve.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof container with the ingredients on top of another container with hot water and whisk the ingredients in the upper container until they thicken and froth. The water in the lower container should not boil vigorously! Optionally, pour chocolate glaze over the roulade or spread it with chocolate cream.
