Pour the milk into a cup, add butter, sugar, and salt. Heat while stirring until lukewarm or 42 degrees Celsius. Crumble the yeast into the milk, mix, and let it sit for 10 minutes.

Sift the flour into a larger bowl. Make a well in the center and pour in the milk with yeast. Add the beaten eggs, vanilla, and lemon zest. The dough will be very wet, so knead it by scooping from the bottom, pulling, and folding (similar to kneading bread dough). After 15 minutes of kneading, cover the bowl with foil and let it rise for 1 hour.

Turn the dough onto a floured surface, flour the top, then roll it out to one centimeter thick.

If you don't have a donut cutter, you can use two glasses or round cookie cutters; one larger (8 cm diameter) and one smaller (3 cm diameter). Flour the cutter or glass before cutting.

Place the rings on a floured baking paper, leaving some space between them. Gently gather the scraps into a ball and repeat the process. Cover the donuts with a kitchen towel and let them rise for 45 minutes.

15 minutes before the end of rising, start heating the oil slowly in a larger pot over medium-high heat. Prepare a tray or plates for the donuts, lined with baking paper or paper towels.

When the oil reaches 170 degrees Celsius, carefully place a few donuts into the oil, leaving some space between them (the top side of the donuts should be down when placed in the oil). Fry them for about a minute until golden brown, then flip and fry the other side. Place the fried donuts on the prepared tray or plates.

Advice
The ingredients are enough to make about 20 donuts. For a healthier version, the donuts can be baked in an oven preheated to 190 degrees Celsius for 12 minutes. After baking, brush them with melted butter and optionally roll them in a mixture of sugar and cinnamon. Children will be attracted to the white chocolate glaze, sprinkled with colorful crumbs. A combination of milk or dark chocolate and coconut is also tasty. Melt the chocolate over a water bath, then dip the donuts into it and sprinkle with the chosen topping.
