Fluffy Apple Pancakes

Ingredients

2 piece Egg, fresh

360 ml Milk, whole milk

250 g Wheat flour, white, multi-purpose

1 teaspoon Spices, cinnamon, ground

1.5 teaspoons Baking powder

0.25 teaspoons Salt, table

50 g Sugar, white

3 pieces Apples, rose

pieces Lemon zest, fresh

Steps

Crack the eggs into a bowl and whisk them well with a hand whisk. Pour in the milk (or yogurt) and mix the ingredients thoroughly.

In another bowl, mix the dry ingredients: flour, baking powder, cinnamon, sugar, and salt.

Peel the apples and coarsely grate them. Add the dry ingredients to the bowl with the wet mixture and quickly stir with a whisk to form a sticky batter. Mix in the grated apples and lemon zest.

Heat a pan over medium heat for cooking the pancakes. Grease it with a little oil or a piece of butter. Wait for the fat to heat up, then spoon small mounds of the prepared batter into the pan. Flatten them slightly with the back of the spoon to form small, slightly thicker pancakes.

When the pancakes are golden brown on the bottom, flip them with a spatula and cook the other side. Repeat the process until all the batter is used. Sprinkle the pancakes with powdered sugar and serve while still warm. Greek yogurt pairs excellently with them.
