Fluffy Buckwheat Cubes with Chocolate Glaze

Preheat the oven to 180 degrees Celsius. Grease a baking dish with butter. In a bowl, beat the eggs, add sugar, vanilla sugar, a pinch of salt, juice of half a lemon, and beat with an electric mixer until the mixture becomes lighter and its volume triples.

In another bowl, sift the buckwheat flour, cornstarch, and baking powder. Mix the dry ingredients, then gradually sift them into the wet ingredients in several smaller portions, carefully mixing each time.

Pour the mixture into the baking dish and place it in the preheated oven for 30 minutes. While still hot, pierce the cake several times with a skewer and pour milk over it, then let it cool.

Meanwhile, whip the cream, add condensed milk, and continue whipping until a thick cream forms. Spread the cream evenly over the cake and smooth the top. Place the dessert in the refrigerator for one hour.

Break the chocolate into pieces, add cream and butter, and melt everything together over a double boiler. Pour the chocolate mixture over the cream. You will have little time for adjustments as the chocolate will start to set.

Place the dessert in the refrigerator for two hours, then cut it into cubes and serve.
