Fluffy Pancakes with Buttermilk and Blueberries

Ingredients

150 g Wheat flour, white, multi-purpose

150 ml Whey, sour, liquid

2 teaspoons Butter, unsalted

100 g Blueberry, raw

If necessary, quickly rinse the blueberries under running water and dry them well with paper towels. In a large bowl, sift the flour, baking powder, and baking soda. Add salt and mix the ingredients well.

In a smaller bowl, lightly beat the eggs with a hand whisk. Add the buttermilk, melted butter, and maple syrup, and mix everything well. Pour the liquid mixture into the bowl with the dry ingredients. Quickly mix with a whisk or rubber spatula until the ingredients are combined and you get a thick batter, then gently fold in the blueberries.

Place a large pan on the stove and heat it up. Add a piece of butter, wait for it to melt, then tilt the pan left and right to evenly coat it. Use a spoon to place four dollops of batter into the pan and shape them into small, thick pancakes with a diameter of 10 cm using the back of the spoon. Cook the pancakes over medium heat, and when they are golden brown on the bottom and bubbles start to appear on the top, carefully flip them with a spatula. Cook them on the other side for about 2 minutes, then remove them from the pan and keep them warm on a heated plate covered with a lid. Repeat the process until all 12 pancakes are cooked. Grease the pan as needed.

Stack the cooked pancakes and serve immediately. Before serving, drizzle them with maple syrup or dust them with powdered sugar.

Advice
Instead of buttermilk, you can use liquid yogurt or milk mixed with a tablespoon of lemon juice and let it sit for 10 minutes. Maple syrup can be replaced with honey or regular sugar.
