Fluffy Potato Buns
Light and fluffy as clouds. Buns that youll gladly place even on a festive table. You wont have much work with them, especially since you can also use leftover mashed potatoes.

Ingredients

600 g Flour, Wheat, bread flour

3 dl Water

20 g Sugar, white

1 piece Yeast, dry

2 teaspoons Salt, table

200 g Potatoes, white

80 g Butter, unsalted

In a large bowl, place the flour and make a well in the center. Mix the water with sugar and pour it into the well. Sprinkle the yeast over the liquid, mix slightly, and let it stand for 10 minutes to activate the yeast.

Meanwhile, melt 30 grams of butter, which we will need for greasing the bowl and baking dish, as well as for brushing the buns. The remaining butter will be needed for the dough, but it should be softened.

Sprinkle salt around the well in the flour, then add the mashed potatoes and 50 grams of softened butter to the bowl. Start mixing with a wooden spoon, and when the ingredients come together, transfer the dough to the counter, where you knead it for about 10 minutes, then shape it into a loaf and place it in a greased bowl. Cover with a kitchen towel and let it rise for 1 hour.

After the first rise, turn the dough onto a lightly floured counter, knead it briefly, and divide it into 12 equal parts. Shape them into balls and place them in a greased baking dish, sized 25 x 35 centimeters.

Brush the balls with melted butter, cover with a kitchen towel, and let them rise for at least 45 minutes.

Meanwhile, preheat the oven to 205 degrees Celsius. Bake the risen buns for 25 to 30 minutes, with the bottom heat on for the last 10 minutes.

After baking, let the buns cool slightly, then transfer them to a wire rack to cool completely. Optionally, brush them with butter once more to make the buns look even more tempting.
