Fluffy Semolina Dumplings
Light and fluffy dumplings that melt in your mouth – semolina dumplings are certainly one of the most popular soup accompaniments. Although they seem simple, they often turn out too hard or fall apart. The key to perfect homemade semolina dumplings lies in the ratio of ingredients 1 – 3 – 6. This means for one egg, we use 30 grams of butter and 60 grams of wheat semolina.

Crack an egg into a bowl and whisk it well with a fork or hand whisk. While mixing, slowly pour in the melted and cooled butter. Season with a pinch of salt, and optionally add a little grated nutmeg.

Gradually add the semolina to the egg-butter mixture, stirring continuously. Once you have a uniform, medium-thick mixture, stop stirring. Cover the bowl and let it rest for about 15 minutes to allow the semolina to swell.

The dumplings can be cooked in salted boiling water or directly in the soup. To achieve a nice shape, use two spoons, or you can use a single spoon that has been greased or dipped in hot soup/water. Scoop a portion of the mixture with the spoon and gently place it into the lightly boiling liquid. The dumpling will naturally separate from the spoon upon contact with the hot liquid. Repeat the process until all the mixture is used.

Cover and cook the dumplings for 10-15 minutes until they swell and soften. The liquid should not boil too vigorously while cooking the dumplings.
