Focaccia with Black Olives
Drizzled with olive oil and enriched with black olives, it is truly something special. And because it also contains a pinch of selected Italian spices, it is absolutely fantastic!

Ingredients

500 g Flour, Wheat, bread flour

120 g Olives, black, in brine

Steps

Prepare a large bowl and sift the flour into it. Make a well in the center of the flour, add the yeast, and sprinkle the salt around the edges of the flour. While mixing, gradually add the oil and enough lukewarm water to form a soft and sticky dough.

Turn the dough out onto a lightly floured work surface and knead for about 5 minutes, or until it becomes smooth and elastic and no longer sticks to your hands or the work surface. Then transfer the dough to a warmed and greased bowl, cover it with plastic wrap, and let it rise in a warm place for one hour.

Prepare two baking trays and grease them with about two tablespoons of oil. Thoroughly drain the olives, remove the pits, and roughly chop them. On a lightly floured work surface, knead the risen dough well again and incorporate the olives into it.

Then divide the dough into two parts, flatten them, and shape them into oval loaves. Place them on the prepared baking trays, cover with plastic wrap, and let the dough rise again for one hour.

Preheat the oven to 200 degrees Celsius. Use your fingers to press small indentations into both loaves. Drizzle the loaves with two tablespoons of olive oil and sprinkle with coarse salt and Italian spices. Bake the loaves in the preheated oven for 30-35 minutes, until they achieve a golden-brown color.

Remove the baking trays from the oven and drizzle the loaves with the remaining olive oil. Cover them with a kitchen towel to slightly soften the crust. Wait until the loaves have completely cooled.

Cut each loaf into pieces of any size, arrange them on a serving platter, and serve.
