475 g Flour, Wheat, bread flour

1 teaspoon Salt, table

1.25 teaspoons Yeast, dry

2 spoons Oil, olive

275 ml Water

125 g Olives, black, in brine

40 g Tomato, dried

3 pinch Salt, table

Steps

Drain the olives. Chop them roughly along with the sun-dried tomatoes. Wash the rosemary and shake it dry, then strip the needles from the sprigs and set them aside for later. Prepare a large bowl and add the flour. Salt the edges of the flour and sprinkle with sugar, then make a well in the center and pour in the yeast. While mixing, gradually add the oil and enough lukewarm water to form a soft dough.

Turn the dough out onto a lightly floured work surface and knead for about 5 minutes or until it becomes smooth and elastic. Well-kneaded dough should not stick to your hands or the surface. Transfer the dough back to the bowl, then lightly cover it with oiled plastic wrap and let it rise in a warm place for about an hour.

Once risen, turn the dough out onto a lightly floured work surface and knead it slightly again. Prepare a baking dish by greasing it with oil. Stretch the dough to fit the greased baking dish, then use the handle of a wooden spoon to make indentations on the surface of the dough. Top the dough with olives, sun-dried tomatoes, rosemary, and a sprinkle of salt. Leave the dough uncovered to rise for about 20 minutes.

Preheat the oven to 200 degrees Celsius. Before baking, drizzle the dough with half of the olive oil, then place the baking dish in the preheated oven for 15 minutes.

Once the focaccia is baked, drizzle it with the remaining olive oil. Cut it into pieces of your desired size, arrange them on a serving platter, and serve.
