French Apple Tart with Almonds

Steps

Preheat the oven to 190 degrees Celsius and thoroughly heat the baking dish in it. Roll out the shortcrust pastry on a floured surface and line the tart pan with it. Mix the filling ingredients with a hand mixer into a light and fluffy mixture, which is then spread onto the pastry and smoothed out on top.

Peel the apples, remove the cores (using an apple corer), and cut them in half lengthwise. Place the halves on the board with the cut side down. Using a sharp and thin knife, slice them thinly, ensuring they stay together. Finally, gently press on them so that each half fans out into a row.

Carefully transfer each row onto the filling using a palette knife, as shown in the picture. Gently press the apple slices into the filling.

Place the apricot jam and water in a saucepan and heat while stirring, then strain the mixture through a sieve into a smaller bowl. Brush half of the jam onto the apples. Place the tart on the hot baking dish and bake in the preheated oven for 45 minutes or until the pastry turns golden and the apples start to brown slightly.

Once the tart is baked, reheat the remaining jam and brush it over the apples. Let the tart cool slightly, then cut it into smaller pieces, serve on plates, and present to your guests.

Advice
Take the butter out of the refrigerator at least half an hour before use to soften it. The tart pan should be 23 cm in diameter.
