Ingredients
-
250 g chocolate, dark
-
225 g Butter, unsalted
-
90 g Sugar, white
-
30 ml Alcohol, Liqueur, Crème de Menthe
-
5 pieces Egg, fresh
-
1 spoon Wheat flour, white, multi-purpose
-
50 g Powdered sugar
-
1 spoon Butter, unsalted
Steps
-
Line the baking pan with parchment paper and lightly grease it with a little butter. Wrap the outer part of the pan with aluminum foil to prevent water from getting into the batter during baking.
-
Cut the butter into smaller pieces and place them in a saucepan. Add the chocolate and sugar to the saucepan. Melt everything together over low heat, stirring constantly to create a smooth mixture. Then remove the saucepan from the heat and let it cool slightly. Stir in the brandy while the mixture is still warm.
-
Crack the eggs into a bowl and beat them with an electric mixer for 1 minute. Then mix in the flour and gradually pour in the cooled chocolate mixture while continuously stirring. Mix until you get a smooth and slightly frothy batter.
-
Preheat the oven to 180°C. Place a saucepan with about a liter of water on the stove and bring it to a boil. Place the round baking pan, which you have lined with foil, into a larger deep baking dish. Pour enough boiling water into the larger dish so that the round pan is submerged about 2 cm. Fill the round pan with the prepared batter and place it in the preheated oven. Bake for 25 minutes or until the edges are well baked but the center is still slightly soft.
-
Then remove everything from the oven and take the round pan out of the water. Remove the outer foil and let the cake cool completely. As it cools, the center of the cake will settle and crack slightly.
-
Once cooled, carefully invert the cake onto a plate and remove the parchment paper. Dust the cake with powdered sugar, slice it, and serve immediately.

Advice
Instead of brandy, you can use orange liqueur. If you wont use the cake immediately, store it in the refrigerator. If you prepare the cake in advance, dust it with powdered sugar just before serving.
