French Elephant Ear Cookies
You can make puff pastry yourself, or you can buy ready-made puff pastry. Shaping the cookies will take some time, but the final product will definitely be a success. The ingredients will make 50 cookies.

250 g Dough, puff

2 cups Sugar, brown

1 teaspoon Spices, cinnamon, ground
Steps

Divide the dough into two parts and roll it out on a lightly floured surface into two rectangles, 3 mm thick. Make sure the dough stays cool. If it warms up, refrigerate it briefly.

Preheat the oven to 200 °C. Line a baking sheet with parchment paper.

Sprinkle sugar on the work surface and place one rectangle of dough on top. Sprinkle sugar over the dough and fold the longer sides inward so they meet in the middle. Gently press the dough in the center where the folded sides meet to seal.

Fold the sides inward again so they meet in the middle. Finally, fold the dough like closing a book to create a roll with a U-shaped cross-section.

Cut the roll into 1 cm thick slices with a sharp knife. Place the cookies on the baking sheet and sprinkle them with sugar.

Place the baking sheet in the preheated oven and bake the cookies on the middle rack for 6 to 7 minutes. Then remove them from the oven, flip them over, and sprinkle sugar on the other side. Bake for another 3 to 5 minutes until they firm up and the edges turn golden.

Let the cookies cool on a wire rack, arrange them on a serving plate, and serve.
