French Mashed Potatoes with Garlic and Cheese
Mashed potatoes enriched with crushed garlic and melted cheese are a true French specialty. Once prepared mainly by shepherds, today it is among the very well-known French dishes.

Ingredients

1 kg Potatoes, white

230 g Cheese, groats

30 g Butter, unsalted

2 pod Garlic, fresh

0.5 teaspoons Salt, table

2 pinch Spices, pepper, white

Coarsely grate the cheese. Peel and roughly chop the garlic. Place a pan with butter on low heat. Once melted, add the garlic and cook it very slowly for 30 minutes on the lowest heat. Stir occasionally during cooking.

Meanwhile, peel and wash the potatoes. Cut smaller pieces in half, and larger ones into quarters. Place the potatoes in a pot, add enough cold water to cover them, and lightly salt the water. Place the pot on high heat. Wait for the potatoes to boil, then cover the pot, reduce the heat to medium-high, and cook for another 20 minutes. Check if the potatoes are cooked with a thin, sharp knife. Be careful not to overcook the potatoes.

Drain the cooked potatoes and transfer them to a large, preferably warmed bowl, and mash them well.

Mix in the butter with garlic, pepper, and a handful of cheese. Mix well, and once the cheese melts, add another handful of cheese while stirring. Repeat the process until all the cheese is incorporated.

Serve the mashed potatoes immediately.

Advice
While adding the cheese and mixing, the mashed potatoes become increasingly thick and sticky. It will be easier to keep them warm if we stir them over a pot of slightly boiling water, but not for too long. Overheating would harm the smooth and elastic texture of the mashed potatoes. Mashed potatoes pair very well with roasted poultry or pork.
