Fresh Blueberry Pie
Preparing the pie is very simple and especially suitable for hot summer days, as you dont need to turn on the stove or oven. All you need to do is finely grind the ingredients, then store the prepared pie in the refrigerator to cool and set.

In a food processor, add the walnuts, oat flour, and coconut flour, and finely grind all the ingredients. Add the chopped dates, grated orange zest, and one tablespoon of cold water. Mix everything well again to form a uniform mixture. Transfer the mixture to a round pie dish (22 or 23 cm in diameter). Press it firmly into the bottom of the dish using the back of a spoon, then use your fingers to pull it up to the edges and create a nice rim. Once the base is prepared, place the dish in the refrigerator for a while to let the base set.

Clean the food processor thoroughly and add the soaked cashews. Add the blueberries, maple syrup, and coconut oil. Cut the vanilla bean in half and scrape out the seeds with the tip of a knife, adding them to the other ingredients in the food processor. Blend until you get a smooth and uniform purple mixture. Take the dish out of the refrigerator and pour the prepared mixture over the base. Use the back of a spoon to spread it evenly over the base and smooth the top nicely. Place the dish in the refrigerator for at least 4 hours to let the pie cool well and the cream set and firm up.

Advice
You can prepare oat flour yourself. All you need are rolled oats, which you finely grind. The volume of a cup is 240 - 250 ml. For a more vibrant color, you can replace some of the blueberries with blackberries.
