Fresh Strawberry Pudding
If you like pudding, fresh pastry offers an excellent substitute for starch cream. These are chia seeds, which release a natural gel during soaking, very similar in texture to pudding. If we add coconut milk, fresh strawberries, and vanilla, we get a pudding that tastes incomparable to the one from a packet, as it is much more delicious and, of course, much healthier.

750 g Strawberries

70 ml Coconut milk

5 spoon Syrup, maple

1 spoon Juice, lemon

1 pod Vanilla, extract, natural

Steps

Clean the strawberries and rinse them quickly under running water if necessary. Place them in a narrow and tall container, add coconut cream, lemon juice, and maple syrup. Mix well with a hand blender to make a strawberry puree.

Cut the vanilla pod lengthwise and scrape out the seeds with the tip of a knife, then mix them into the strawberry puree. Finally, add the chia seeds, mix everything well, and refrigerate for four hours.

Take the prepared pudding out of the refrigerator, serve it in cups or deep bowls, garnish with a few slices of fresh strawberries, and serve.

Advice
For a good "coconut cream," choose coconut milk with the highest fat content in the store. If we want the pudding to be thicker, we grind the chia seeds beforehand.
