Fresh Tomato Soup

Ingredients

1 kg Tomato, red

300 g Potatoes, white

1 piece Onion, raw

1 dl Sweet cream

25 g Butter, unsalted

40 g Cheese, Parmesan, hard

1 pinch Salt, table

1 pinch Spices, pepper, black
Steps

Wash the tomatoes and place them in boiling water for a few minutes to soften. Then drain the water, cool the tomatoes, peel them, and finely chop them. Peel the onion, wash it, and slice it into thin rings.

Melt the butter in a pot and slowly sauté the onion for five minutes until it softens but does not brown. Add the chopped tomatoes to the onion and simmer everything together for 15 minutes. Meanwhile, wash the potato, peel it, and cut it into chunks.

Lightly season the soup with pepper and salt. Pour in seven deciliters of water, add the chopped potato, bring everything to a boil, and cook over moderate heat for 20 minutes. Blend the soup with an immersion blender and bring it to a quick boil once more. Add the cream, remove from heat, and serve in bowls. Sprinkle with chopped basil on top.

Advice
