Fried Anchovy Fillets
Many people dislike anchovies because of their small bones. Everyone will enjoy cleaned anchovies prepared as fillets and fried until golden brown. Served with homemade bread and a bowl of fresh salad, they make a perfect light lunch or dinner.

Ingredients

800 g Fish, anchovies, fresh

100 g Koruzna moka, whole grain, yellow

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

2 pod Garlic, fresh

0.5 bouquet Parsley, fresh

pieces Oil, vegetable oil, canola
Steps

Clean the anchovies, rinse them, and remove the head, tail, and backbone. Make a cut along them so you can open and flatten them, creating small flat fillets.

In a bowl, mix flour, salt, and pepper, then coat the anchovy fillets in the mixture and shake off the excess.

Heat the frying oil in a deep pan. The oil layer should be at least 2 cm deep. The oil is hot enough when bubbles form around a wooden spoon handle dipped into it.

Fry the anchovy fillets until crispy on both sides in the hot oil. Fry each side for about 2 to 3 minutes. Fry in batches, only a few fillets at a time. Place the fried fillets on a plate lined with paper towels to absorb excess oil.

Rinse the parsley, shake it dry, and chop it. Peel and finely chop the garlic. Mix the parsley and garlic in a small bowl with a pinch of salt.

Arrange the fried anchovy fillets on plates. Sprinkle them with the parsley and garlic mixture. Serve with homemade bread and a bowl of fresh salad.
