Fried Apples with Vanilla Sauce

Beat the egg with a whisk, then mix it with milk, salt, and sugar. Sift the flour into a larger bowl and make a well in the center, into which you pour the egg mixture. Mix the ingredients in the bowl well with a whisk to obtain a smooth batter without lumps. Let the batter rest for half an hour.

Pour 450 ml of milk into a saucepan. Split the vanilla pod lengthwise and scrape out the seeds with the tip of a knife, adding both the seeds and the pod to the saucepan with the milk. Place the saucepan on the stove and slowly bring the milk to a boil over moderate heat.

Mix the egg yolks, sugar, and cornstarch into the remaining milk. When the milk boils, remove the saucepan from the heat, take out the vanilla pod, and stir the milk with the egg yolks into the hot milk. Return the saucepan to the stove and slowly bring the mixture to a boil. Continuously whisk with a whisk to prevent lumps from forming. Once the sauce thickens, remove the saucepan from the heat.

Peel the apples and remove the cores, then slice them into 1 cm thick rings, which you drizzle with lemon juice. Heat the oil well in a frying pan. Dip the apple rings into the batter and fry them golden brown on both sides in the hot oil. Place the fried rings on a plate lined with paper towels.

Mix the vanilla sauce well. Serve the fried apple rings on plates and top with the sauce.
