Fried Artichoke Balls

8 pieces Artichoke

1 piece Lemon, fresh, without shell

2 spoons Cheese, Parmesan, grated

100 g Breadcrumbs, dried

Steps

Fill a large bowl with cold water and squeeze the juice of a whole lemon into it. Wash the artichokes and remove the outer hard leaves, leaving only the hearts. Soak them in the acidic water for 20 minutes to prevent them from turning black.

Bring water to a boil in a pot and add a teaspoon of salt. Cook the artichoke hearts in the boiling water for about five minutes until they soften. Drain the cooked hearts, let them cool slightly, and dry them.

Peel the garlic and finely chop it together with the parsley. Mash the cooked hearts with a fork and mix well with eggs, Parmesan, garlic, parsley, salt, and pepper.

Shape the mixture into balls of any size with your hands, coat them in breadcrumbs, and fry them until golden brown in hot oil. Place the fried balls on a paper towel to drain excess fat.

Advice
Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The fat is hot enough for frying if small bubbles form around a wooden spoon handle.
