Fried Bananas with Coconut Ice Cream

100 g Wheat flour, white, multi-purpose

150 ml Milk, whole milk

2 piece Banana, fresh

1.5 spoons Juice, lemon

In a bowl, mix the flour, sugar, baking soda, and salt. Make a well in the center of the dry ingredients and pour in the beaten egg and half of the milk. Mix well and gradually add the remaining milk. Once you have a smooth batter without lumps, stop mixing. The mixture should be slightly thicker than pancake batter.

Transfer the coconut ice cream from the freezer to the refrigerator. Heat the oil in a deep pan (pot). Peel the bananas and cut them into 1.5 to 2 cm wide rings, then drizzle with a little lemon juice. Dip each piece into the prepared batter and carefully place it in the hot oil. Fry until the fritters are golden brown on the bottom, then carefully flip them and fry the other side.

Remove the banana fritters from the oil and place them on a plate lined with paper towels. Take the coconut ice cream out of the refrigerator. Serve the fritters on plates. Add a scoop of coconut ice cream to each plate and serve the prepared dessert.

Advice
After the coconut ice cream, you can sprinkle some toasted coconut. Instead of coconut, you can also use another type of ice cream. Vanilla or cinnamon work exceptionally well. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
