Fried Calamari with Garlic Mayonnaise

Ingredients

300 g Fish, squid

200 g Wheat flour, white, multi-purpose

pieces Salt, table

1 pod Garlic, fresh

5 spoon Mayonnaise

pieces Oil, vegetable oil, canola

pieces Lemon, fresh, without shell

Clean the calamari tubes, rinse them under running water, and dry them thoroughly with paper towels. Cut them into 0.5 to 1 cm wide rings.

In a large freezer bag, add flour. Season with salt and pepper, close the bag, and shake it several times to mix the spices with the flour. Add the sliced calamari to the bag. Close the bag again and shake it several times to ensure the flour and spices coat all the rings evenly.

Peel the garlic, finely grate it (or press it through a garlic press), and mix it with the mayonnaise. Serve the garlic mayonnaise in a nice bowl.

Heat oil in a large pot and fry the calamari in batches. Once they turn a nice golden brown, remove them from the oil with a slotted spoon and place them on a plate lined with paper towels.

Serve the fried calamari on a plate or platter. Accompany them with the garlic mayonnaise and lemon wedges.

Advice
Fry in a large amount of fat. The food should float in it. The frying fat is hot enough when small bubbles form around a wooden spoon handle dipped into it. The garlic mayonnaise can be enriched with the addition of Worcestershire sauce.
