Ingredients
-
1 kg Fish, squid
-
150 g Wheat flour, white, multi-purpose
-
4 pieces Tomato, red
-
0.5 teaspoons Spices, rosemary, dried
-
0.5 teaspoons Spices, basil, dried
-
1 teaspoon Oil, olive
-
0.5 teaspoons Salt, table
-
1 piece Lemon, fresh, without shell

Steps
-
Clean the calamari if necessary, rinse them, and dry them thoroughly with paper towels. Cut the bodies into rings about one centimeter thick.
-
Place flour in a container (a container with a lid is most suitable) and add the calamari (the rings and tentacles). Close the container tightly and shake until the flour coats each ring.
-
Submerge the tomatoes in boiling water for a few minutes, then peel them and cut them into smaller pieces. Remove the seeds. Place the tomato pieces in a blender and blend until smooth to make the sauce. Add rosemary, basil, and a little olive oil. Season with salt to taste and blend well again.
-
Heat the oil well in a deep pan. Carefully place the breaded calamari into the hot oil. Fry until golden brown, then drain and season with salt.
-
Serve the fried calamari on plates with lemon wedges and tomato sauce.

Advice
You can fry squid in the same way. For more batter, coat the calamari in flour, then in eggs, and finally in breadcrumbs. Be careful with the oil when using breadcrumbs to prevent them from burning. It is best to use palm oil. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
