While the pancakes are still warm, top them with cheese and ham, then roll them up. Make sure all edges are folded inward while rolling.

Spread flour on one shallow plate and breadcrumbs on another. In a deep plate, beat the eggs with a fork and lightly season with salt. First, coat the pancakes in flour, then dip them in the beaten eggs, and finally roll them in breadcrumbs.

Heat oil well in a pot and fry the breaded cannelloni until golden brown. Remove the fried cannelloni from the oil using a slotted spoon and place them on a plate lined with kitchen towels. Wait for the excess oil to drain, then serve the cannelloni on plates with your chosen side dish.

Advice
