Fried Chicken Cutlets with Seasoned Breadcrumbs

Ingredients

600 g Meat, chicken, breasts

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

60 g Wheat flour, white, multi-purpose

100 g Breadcrumbs, dried

1 teaspoon Lemon, fresh, without shell

1.5 spoons Parsley, fresh

1 piece Egg, fresh

2 spoons Butter, unsalted

2 spoons Oil, vegetable oil, canola

Clean the chicken fillets, wash them, and thoroughly dry them with paper towels. Cut them into approximately 0.5 cm thick cutlets, arrange them on the work surface, cover with plastic wrap, and gently pound with a meat mallet. Season the cutlets with salt and freshly ground pepper.

Prepare three plates - two shallow and one deep. On one plate, sift the flour, on another, spread the breadcrumbs and mix them with lemon zest and chopped parsley, and in the deep plate, whisk the egg.

First, coat the cutlets in flour, then dip them in the egg, and finally coat them in the breadcrumbs.

Heat oil and butter in a large deep pan. Place the cutlets on the heated fat and fry them until golden brown on both sides. Fry each side for about 3 to 4 minutes.

Place the fried cutlets on a plate lined with paper towels to drain excess fat.

Serve the cutlets on plates and offer them with a chosen side dish.
