Fried Chicken with Broccoli
Add some cooked vegetables to the fried chicken cutlet to avoid always having fries as a side dish.

50 g Wheat flour, white, multi-purpose

100 g Breadcrumbs, dried

600 g Meat, chicken, breasts

Steps

Rinse the parsley and quickly dry it with a paper towel. Chop the parsley and divide it into two parts. Crack the eggs into a deep plate and whisk them, then mix in half of the parsley. Prepare two more deep plates, one with flour and one with breadcrumbs. Rinse the chicken cutlets and dry them with a paper towel, then season them with salt.

Coat each cutlet on all sides with flour, dip it in the whisked egg, and finally coat it with breadcrumbs. Place the prepared meat on a clean plate.

Cut the broccoli into smaller pieces and rinse it well. Place it in a pot, then add enough water to cover the broccoli. Salt the water, bring it to a boil, and cook for another 10 minutes. Drain the cooked broccoli and transfer it to a bowl. Cover the bowl with a lid to keep it warm.

Place a pan on the stove and heat the oil. Fry each piece of breaded meat until golden brown on both sides (about five minutes per side), serve on plates, sprinkle with fresh parsley, and serve with broccoli and a slice of lemon.

Advice
You can add other chopped herbs to the egg mixture where you dip the cutlets: rosemary, thyme, oregano… It pairs well with a yogurt herb sauce or homemade tartar sauce. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or oil with a high smoke point. The frying fat is hot enough if small bubbles form around a wooden spoon handle.
