Ingredients
-
500 g Green beans, fresh
-
100 g Flour, Wheat, bread flour
-
2 piece Egg, fresh
-
2 pinch Salt, table
-
pieces Milk, whole milk
-
150 g Breadcrumbs, dried
-
pieces Oil, vegetable oil, canola
Steps
-
Clean and wash the green beans. Bring water to a boil in a pot and add salt.
-
Cook the green beans in the salted water until they soften but still remain firm to the bite (cooked 'al dente'). Meanwhile, prepare an ice bath in which you immerse the cooked beans (to stop the cooking process). Wait for the beans to cool, then drain them and dry them thoroughly with paper towels.
-
Prepare three plates; two shallow and one deep. On the first shallow plate, spread flour, and on the second, breadcrumbs. In the deep plate, crack the eggs, add salt, and whisk them with a fork. Add a little milk if needed. Take a handful of beans and first coat them in flour, then dip them in the eggs, and finally roll them in breadcrumbs.
-
Fry the breaded green beans in hot oil in batches until golden brown. Once fried, remove them from the oil with a slotted spoon and drain on paper towels. Serve the fried green beans while still warm.

Advice
For preparing fried green beans, the most suitable are round varieties of beans with firm pods and no strings. To spice up the flavor, you can mix some grated Parmesan into the breadcrumbs. Breaded green beans can also be baked in the oven. Arrange them on a baking sheet lined with parchment paper, drizzle with oil, and bake until crispy in the oven.
