Fried Mushrooms
A popular homemade dish that can be served as a side, main course, or cold snack. It pairs excellently with homemade tartar sauce, and potato salad makes a great accompaniment.

600 g Mushrooms, mushrooms, fresh

Clean the mushrooms with a brush or a damp cloth and trim the woody ends if necessary. Cut larger mushrooms in half, leaving smaller ones whole. Drizzle the mushrooms with lemon juice to prevent them from turning black.

Prepare three plates: one with flour, one with breadcrumbs, and the third with beaten eggs seasoned with salt and pepper. Coat the mushrooms first in flour, then in the egg mixture, and finally in the breadcrumbs.

Heat the frying oil in a deep pan and fry the breaded mushrooms until golden brown. Once fried, remove them from the oil with a slotted spoon and place them on paper towels to drain. Serve warm or cold with your chosen side.

Advice
Fry in a large amount of fat. The food should float in it. Use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle. Fried mushrooms can also be prepared in the oven. Arrange them on baking paper or a rack, lightly sprinkle with oil (or dot with butter pieces), and bake at 200 degrees Celsius for 15 to 20 minutes.
