Fried Pork with Rice Noodles

400 g Pasta, Rice noodles

2 spoons Oil, vegetable oil, canola

500 g Meat, pork, ground

3 pieces Onion, young

2 pod Garlic, fresh

1 teaspoon Ginger, fresh

2 spoons Alcohol, Wine, White

1 spoon Soy sauce, shoyu, less salt

1 dl Soup base, chicken, cube

1 piece Bell pepper, red, fresh

2 piece Chili peppers, red chili, fresh

0.25 bouquet Coriander, leaves, fresh

3 spoons Peanuts, roasted in oil, salted
Steps

Thoroughly clean and wash all the vegetables. Remove the seeds from the peppers and chilies, then cut them into smaller pieces. Cut the white part of the spring onion into pieces, and slice the green part into rings. Peel and finely chop the garlic. Coarsely chop the peanuts. Rinse the cilantro under running water if necessary, shake it well, and coarsely chop it.

Place a pot with a larger amount of lightly salted water on the stove. Add the rice noodles to the boiling water and cook them for the time indicated on the package (approximately 4 minutes). Drain the cooked noodles well.

Place a wok on the stove and heat it well. Pour oil into the hot wok and wait for it to heat up. Add the ground pork and stir-fry for 2 minutes. Then add the grated ginger, white part of the spring onion, and garlic. Continue stir-frying until the meat is nicely browned, then pour in the rice wine. Season with light and dark soy sauce, mix well, and add the broth. Let the contents in the wok come to a boil.

After about 1 minute of cooking, add the peppers, chilies, and green part of the spring onion to the ground meat. Add the drained noodles, mix well, and serve on plates. Garnish the dish with cilantro and peanuts, and serve.
