Fried Rice Chinese Style
A simple dish for wok lovers, allowing for various vegetable combinations.

Ingredients

200 g Rice, white, long grain

200 g Fish, lobster, fresh

100 g Beans, fresh

2 pod Garlic, fresh

1 piece Carrot, fresh

3 pieces Leek

2 piece Egg, fresh

8 spoon Oil, peanut

2 spoons Soy sauce, shoyu

2 dl Soup base, beef, cube

1 spoon Alcohol, Brandy

3 pinch Salt, table

1 pinch Spices, pepper, black
Steps

Place the rice in a fine sieve and rinse it under running water until the water is cloudy. Once the starch is removed, drain the rice well.

Transfer it to a pot with about a liter of cold water. Place the pot with the rice on the stove and cook until it boils. Then cover the pot and simmer for eight minutes. Turn off the stove and let the rice stand for about 15 minutes.

Peel and finely dice the carrot. Place a pot of water on the stove and cook the peas with the carrot for about 15 minutes.

Peel and chop the garlic. Clean and wash the leek; chop the white part and slice the green part into rings. If using frozen shrimp, thaw them before cooking.

Place the wok on the stove and heat two tablespoons of peanut oil, add the garlic and the white part of the leek. Once they become translucent, add the shrimp and cook them well while constantly stirring for one minute, then set aside.

In a new wok, heat six tablespoons of peanut oil. Add the rice and stir constantly. Slowly pour in two beaten eggs and mix in the shrimp, peas, and carrot. Pour in the soy sauce and broth, and stir-fry for another two minutes.

Finally, add a teaspoon of sherry, season with salt and pepper to taste. Transfer to a heated plate and sprinkle with the green part of the leek. Serve hot.

Advice
For a fuller flavor, we recommend enriching the vegetable selection with soybean sprouts and diced cooked ham. Peanut oil can be replaced with corn oil. Frozen peas only need to be cooked for three minutes.
