Fried Rice with Vegetables and Shrimp
Fried rice with vegetables and shrimp is an excellent idea for a quick lunch or dinner during the week. The preparation is very fast and simple, and the recipe can be adjusted to your taste - you can add freshly chopped herbs, a teaspoon or two of curry paste, and a crunchy addition of vegetables (carrots, leeks, bell peppers) is also welcome.

Ingredients

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

3 slices Meat, pork, smoked bacon

250 g Fish, shrimp

100 g Beans, fresh

100 g Corn, yellow, fresh

1 piece Egg, fresh

250 g Rice, white, long grain, cooked

2 spoons Soy sauce, shoyu
Steps

Peel and finely chop the onion. Crack an egg into a bowl and lightly beat it with a fork or whisk. Cut the bacon into small pieces.

Heat oil in a wok and fry the bacon and onion, stirring occasionally, for 3 to 4 minutes. Add the shrimp, peas, and corn, and fry for another minute while stirring.

Push the fried ingredients to one side of the wok with a spatula, and add a few drops of oil to the other side. Pour the beaten egg onto the heated oil and scramble it while stirring. Mix the scrambled egg with the fried ingredients, then add the rice to the wok. Wait for it to heat up, then season with soy sauce. Serve the prepared fried rice immediately.
