Ingredients
-
24 pieces Fish, shrimp
-
200 g Asparagus, fresh
-
170 g Wheat flour, white, multi-purpose
-
2.5 dl Water
-
0.25 teaspoons Salt, table
-
pieces Oil, vegetable oil, canola
Steps
-
Peel the shrimp tails, leaving the last segment and the tail intact. Clean the peeled tails if necessary (remove the main vein). Then rinse them and dry with paper towels.
-
First, wash the asparagus, then cut or break off the lower woody part and discard. Cut them into pieces about 4 to 5 cm long.
-
In a bowl, mix flour and water with a hand whisk. Mix until you get a smooth batter without lumps. Finally, add salt to the batter.
-
Heat the frying oil well in a deep pot. Dip the asparagus and shrimp tails into the prepared batter (you can use a fork) and carefully place them into the hot oil. When they turn golden brown, remove them from the oil with a slotted spoon and transfer them to a plate lined with paper towels.
-
Serve the fried shrimp and asparagus on a plate and accompany with various dips.

Advice
Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough if small bubbles form around a wooden spoon handle. You can mix 0.5 teaspoons of baking powder and a little chili powder (or ground hot paprika) into the batter.
