Fried Sweet Potatoes

Ingredients

1 kg Sweet potato

1 teaspoon Salt, table

1 twig Rosemary, fresh

Wash and peel the sweet potatoes. Cut them into long thin sticks (like for fries) and dry them well with a kitchen towel. Wash a sprig of rosemary under running water and shake it well.

Place a deep pan on the stove and heat the oil well, making sure it does not overheat (it should not smoke!). Carefully place the sweet potato sticks into the hot oil using a slotted spoon and fry them until small bubbles appear on the surface of the sweet potatoes. Be careful not to overcrowd the pan, as they will not fry as well.

Remove the fried sweet potatoes from the oil with a slotted spoon and place them on paper towels to drain the excess oil. Repeat the process until all the sweet potatoes are fried.

Before serving, season the sweet potatoes with salt to taste. Now is the time to add any additional spices if desired. For decoration, add a sprig of rosemary and serve the sweet potatoes.

Advice
If we want an even tastier sweet potato, we can sprinkle it with various spices. Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle. We can also use white sweet potatoes.
