Steps

First, prepare the fried tomatoes from peeled tomatoes. Thoroughly drain the tomatoes from the can. Carefully open them, remove the seeds, and then spread them out on paper towels to dry slightly. In a shallow bowl, whisk together eggs, salt, pepper, milk, and Parmesan. Prepare two shallow plates: one with flour and the other with breadcrumbs. First, coat the tomatoes in flour, then dip them in the egg mixture, and finally roll them in the breadcrumbs. Fry the prepared tomatoes in hot oil.

Next, prepare the tomato croquettes. Clean the zucchini, wash, and dry with paper towels. Grate them finely and thoroughly dry. Peel and finely chop the onion. In a bowl, mix together the grated zucchini, chopped onion, tomato concentrate, eggs, Parmesan, half of the flour, salt, and pepper. Shape the mixture into 6 cm long and 1 cm thick croquettes, coat them in the remaining flour, and fry in hot oil.

Finally, prepare the fried cherry tomatoes. In a bowl, mix together eggs, flour, Parmesan, mineral water, salt, and pepper. Let the prepared batter rest for 30 minutes. Thoroughly drain the cherry tomatoes. Dip the tomatoes in the prepared batter and fry in hot oil.

Advice
Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil (e.g., peanut or sunflower oil). The fat is hot enough when small bubbles form around a wooden spoon handle.
