Ingredients
-
2 piece Egg, fresh
-
100 g Flour, Wheat, bread flour
-
4 pinch Salt, table
-
1 piece Small pumpkins
-
1 piece Onion, raw
-
1 handful Green beans, fresh
-
100 g Broccoli, fresh
-
pieces Oil, vegetable oil, canola
Steps
-
In a large bowl, crack the eggs and lightly beat them with a hand whisk. Then, while mixing, gradually add the flour (spoon by spoon) into the eggs (make sure there are no lumps in the batter!). Season the batter with salt to taste.
-
Wash the zucchini and dry it thoroughly with a paper towel. Slice it lengthwise into 0.5 cm thick rounds. Peel the onion and cut it into quarters. Separate the quarters into individual layers. Wash and trim the green beans (cut off the stems). Wash the broccoli, dry it, and separate it into smaller florets.
-
Place a wide pot with a larger amount of oil on the stove. Slowly heat the oil to a moderate temperature. Toss all the vegetables into the prepared batter. Mix everything well. When the oil is hot enough, use a slotted spoon to scoop some pieces of vegetables and add them to the hot oil. Fry the vegetables for 3 to 4 minutes until golden brown. Remove the fried vegetables with a slotted spoon and transfer them to a plate lined with paper towels to absorb excess oil. Repeat the same process with the remaining vegetables.
-
Serve the fried vegetables on plates and offer them with a chosen dip.

Advice
You can also fry other vegetables in the batter (carrots, cauliflower, zucchini, eggplant, etc.). Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon handle.
