First, prepare the herb sauce that will be served with the fried zucchini. Rinse the herbs under running water, shake them dry, and finely chop them. Peel the garlic and finely chop or press it with a garlic press. Mix it with sour cream, mayonnaise, and the chopped herbs. Season with pepper and salt, then refrigerate until use to allow the sauce to cool.

Wash the zucchini and dry it with paper towels. Slice it into 0.5 cm thick slices and season with salt. Cut the ham and cheese into pieces roughly the same size as the zucchini slices.

Take two zucchini slices, dry them with paper towels, and place two slices of ham and one slice of cheese between them. Secure the zucchini "sandwich" with a toothpick. Repeat the process until all the ingredients are used.

Mix the wine, flour, egg yolk, and grated Parmesan until smooth. Season the mixture with salt, then gently fold in the beaten egg whites. You should get a light, thick batter. Dip the zucchini sandwiches into the batter and fry them until golden brown in heated oil.

Place the fried zucchini on paper towels to drain any excess oil. Serve the dish with the chilled herb sauce.
