Frijoles charros
The preparation is somewhat time-consuming, but its worth it, as the result is an excellent and hearty one-pot dish.

Ingredients

1 kg Beans, grains

250 g Meat, pork, shoulder

4 pods Garlic, fresh

1 piece Onion, raw

6 pieces Chili peppers, jalapeño, fresh

3 pieces Tomato, red

4 spoon Soup base, chicken, cube

1 spoon Oil, plant, sunflower

6 slice Meat, pork, smoked bacon

80 g Sausage, chorizo

250 g Meat, pork, smoked ham

2 spoons Koruzni škrob

1 teaspoon Salt, table

1 pinch Spices, pepper, black

0.5 bouquet Coriander, leaves, fresh
Steps

Peel, wash, and finely chop the onion. Peel and wash the garlic. Wash the jalapeño chilies, remove the stems, and finely chop them. Wash the tomatoes, remove the green parts, and cut them into smaller pieces. Peel and finely chop the chorizo sausage. Cut the bacon and ham into smaller cubes.

Drain the beans and transfer them to a large pot. Cover them with enough water to fully submerge them. Place the pot on the stove and bring to a boil. Then add the pork shoulder and garlic. Stir, cover, and reduce the heat. Cook for a good hour. After an hour of cooking, use a skimmer to remove the garlic from the pot, finely chop it, and return it to the pot. Remove the pork shoulder from the pot, cut it into bite-sized pieces, and add it back to the pot.

Add the onion, jalapeño chilies, pepper, tomatoes, and chicken broth base to the pot. Stir well and cook for another hour and a half until the beans are well cooked. Stir occasionally during cooking and add a little water if needed.

Place a pan on the stove and heat the oil. Fry the smoked bacon in the oil. Then add the chorizo sausage and fry everything together for 3 minutes while stirring. Finally, add the ham and fry everything together for another 4 minutes. Add the fried meat to the pot when the beans are well cooked. Stir and add salt to taste. Mix cornstarch in 1dl of cold water, add it to the pot, and cook for another 15 minutes.

Remove the pot from the stove and stir the one-pot dish well. Wash the cilantro thoroughly, shake it dry, pluck the leaves, and finely chop them. Divide the one-pot dish into bowls and sprinkle with freshly chopped cilantro on top.

Advice
If you dont want the dish to be too spicy, remove the seeds from the chilies and discard them. If you happen to have a special variety of green tomatoes at home, add one to the one-pot dish.
