Ingredients

Steps

Place the dried pears in a cup, pour water over them, cover, and cook over moderate heat for 25 minutes until they soften. Then drain and let them cool.

Cut the drained pears, prunes, and figs into smaller pieces. Coarsely chop the walnuts and half of the hazelnuts. Rinse and drain the raisins, sultanas, and cranberries. In a bowl, mix the pieces of dried fruit, raisins, sultanas, cranberries, sugar, cinnamon, cloves, orange peel, and rum. Let the mixture sit for a while so the fruit absorbs the flavors well.

Sift both flours into a bowl and make a well in the center. Crumble the yeast into the well and mix it with a spoonful of sugar, flour, and lukewarm water. Sprinkle salt around the well on the flour. Cover the bowl and let the yeast rise for 15 minutes.

After 15 minutes, mix the yeast with the flour and knead all the ingredients into a smooth and pliable dough. Shape the kneaded dough into a loaf and place it in a greased bowl. Cover the bowl and let the dough rise in a warm place for about 1 hour.

On a floured work surface, quickly knead the risen dough, add the fruit (drain if necessary), all the hazelnuts and walnuts, and knead everything together well once more. Shape into a loaf and let it rest for another half hour.

Preheat the oven to 180 degrees Celsius. Shape the dough into loaves of any size and place them on a lightly greased baking tray. Bake the loaves in the preheated oven for about 1 hour.

Remove the baked loaves from the oven and let them cool completely before serving the bread.

Advice
It is best to use organic oranges whose peel is not treated with pesticides. If organic oranges are not available, immerse the orange in boiling water for a few minutes, then wipe it well to remove the wax, which contains toxins. Optionally, you can also add candied fruit (e.g., candied orange and lemon peel).
