Fruit Ice Cream Popsicles
Three-layer ice cream popsicles for the happiness and joy of your little ones. The preparation is very simple, and the only time-consuming part is freezing the individual layers.

550 g Watermelon, raw

5.5 spoons Sugar, white

1 spoon Juice, lemon

1 spoon chocolate, dark

120 ml Coconut milk

6 pieces Kiwi, fresh

In a blender (or food processor), blend the diced watermelon with 2 tablespoons of sugar and lemon juice until smooth. Skim off any foam, then carefully pour the fruit mixture into molds, filling them about 2/3 full. Sprinkle chocolate chunks over the mixture and use a knife or wooden stick to push them into the mixture (make sure some chunks are pushed close to the edge of the molds so they will be visible once frozen). Insert sticks into the center of the mixture, then close the molds and store them in the freezer for 3 and a half hours.

During the last 30 minutes of freezing, prepare the second layer. Pour coconut milk into a cup and add 1.5 tablespoons of sugar. Heat over moderate heat until all the sugar dissolves, then remove from heat and let the mixture cool for 30 minutes. If it thickens too much and is no longer liquid, thin it with a tablespoon or two of cold water.

Take the molds out of the freezer and remove the lids. Pour a thin layer of the cooled sweetened coconut milk over the frozen fruit mixture. Return the open molds to the freezer for 45 minutes.

Peel and dice the kiwis, then blend them with 2 tablespoons of sugar until smooth. Strain the fruit mixture through a fine sieve to remove the seeds. Let the strained mixture cool for 30 minutes, then carefully pour it over the frozen coconut milk layer. Close the molds and store the popsicles in the freezer for another 2 to 3 hours before serving.
