Ingredients
-
4 pieces Egg, fresh
-
6 spoon Powdered sugar
-
200 g Cheese, creamy
-
200 g Sweet cream
-
pieces Breadcrumbs, dried
-
3 dl Juice, mango
-
pieces Strawberries
-
2 spoons Cocoa, powdered, unsweetened
Steps
-
Separate the eggs into yolks and whites. Add 4 tablespoons of powdered sugar to the yolks and mix for at least 15 minutes until the mixture becomes light and fluffy. Gradually add the mascarpone to the yolks and mix into a smooth cream.
-
Beat the egg whites into stiff peaks, adding 2 tablespoons of powdered sugar and continue beating for another 3 minutes until you get a firm and glossy meringue.
-
Whip the sweet cream to 'mouse tail' consistency, meaning that when you lift the whisk, a creamy 'tail' remains. This is a sign that the cream is perfectly whipped.
-
Carefully fold the beaten egg whites and whipped cream into the mascarpone and yolk mixture. Use a spatula to gently turn the mixture in the bowl, being careful not to deflate it. Fill a piping bag with the prepared cream.
-
Prepare the jars in which you will serve the tiramisu (you can also use glass cups). Dip the ladyfingers on both sides in strawberry juice and layer them at the bottom of the jar (if the ladyfinger is too big, cut it in half). Pipe a layer of cream over the ladyfingers. Add a layer of fresh fruit on top of the cream (I used strawberries and raspberries, but you can also use blueberries, blackberries, or grapes, the choice is yours).
-
Add another layer of ladyfingers over the fruit and finish with a layer of cream, smoothing it with a flat knife and dusting it with cocoa. Chill the dessert well in the refrigerator before serving.

Advice
Since this dessert is not baked, we must be cautious during the summer when temperatures can be very high. Pay attention to the following:- Use only fresh eggs,- The kitchen counter and all utensils, including the jars, must be thoroughly washed and dried,- Carefully inspect the fruit to ensure it is flawless (mold spots can often be found inside raspberries).
